This is me channeling my inner Nigella Lawson as I prepare this VEGAN TVP MINCE recipe for my unsuspecting girlfriend, but as explained in the video, for this first try, which is what I actually filmed, I used ALL the standard ingredients that I would use in a normal spaghetti bolognese sauce, apart from beef mince, but including a beef stock cube and bacon. I really would imagine that each of these can be substituted for perhaps vegetable stock cubes and something to replace the flavour of the bacon. So this is not a vegan recipe but more of a transitional vegan recipe for people wanting to reduce their consumption of beef, this is an easy and surprisingly tasty gateway to a true vegan bolognese.
There is one simple rule to cooking with TVP mince that I managed to master on the first go. I am not a chef and I am certainly not a vegetarian or a vegan but am exactly the sort of fussy meat eater that would normally turn my nose up at the idea of vegan mince, but this recipe and technique would have fooled me if I had not actually cooked it myself. Our western meat based diet is a major contributor to green house gases and global warming. If we are truly ever going to reverse our march towards an uninhabitable planet we must all look towards a more plant based diet, and to that end I have been on a mission to reduce my own insatiable desire and consumption of meat. This is how I cooked semi vegan bolognese sauce.
